Todd's birthday was on Sunday. With the birthday boy's approval, I planned a Cinco de Mayo themed birthday dinner for him on Saturday. Erin, Stuart, Florence and Basil all came into town, and locals Dan, Nancy and Todd's cousin John joined us as well. I was proud of myself for actually planning ahead with all of the menu and food prep: shopping list written on Wednesday, grocery store trip done before work on Thursday, completing all of the slicing and chopping on Thursday and Friday nights, and then cleaning the house and doing all the cooking on Saturday.
Here was the menu:
Cheladas (beer cocktail: 1/2 lime juiced, Negro Modelo, served in a glass with the rim salted)
7-Layer Dip
Guacamole
Salsa
Steak, Pork and Shrimp Fajitas
Black Bean and Corn Salad
Angel Food Cake with Strawberries and Ice Cream
The food was delicious, and the company was even better! Nathan was so excited to have a party at his house, and to spend time with all of his family. Helping Todd open presents was an added bonus.

Ozzie was super excited that John was over, because this meant that he got tons of attention. John misses his cat, and Ozzie misses the days before we had kids.
I didn't get the extended family in a photo, but I did get some shots of the four of us. So crazy that we're a family of four!

So, all of the food I prepared came out great, except the angel food cake, which totally collapsed because the cake pan did not fit over the top of the bottle that I had waiting. Oh well, it still tasted delicious! :)
Nathan picked Uncle Stu to read him his book and tuck him in bed. So cute!
